Goal 79. Eat vegetarian for one week

Last week the challenge was to go 100% percent vegetarian for a whole week. No meat at all for 7 days!

And we did it. Well, except for a few slip-ups. One was realizing that we still had tons of leftover sandwich meat and the other was a piece of ham on an eggs benedict. The whole point of this challenge was to be more aware of and careful with what we eat, so I wasn't about to throw these things out, and I had pretty much forgotten that ham came on an eggs benedict until I had eaten half of it. Haha!

There was one night where I really, really didn't want to have salad for dinner. But since my husband had prepped everything we had it anyways..... And I was wrong. It was good, and equally as filling and satisfying as meat. In fact, it was probably more satisfying because I didn't feel like I had eaten a brick afterwards. Other than that one night we didn't have any problems missing meat. And since we were relying on more veggies we actually were getting our fair share! Normally we lack a little on eating our veggies, so this was a good change.

If you're wondering what we did eat, here's a quick break-down:

Hard-boiled eggs and pumpkin muffins for each breakfast
Black bean quesadillas and sour cream
Megadarra with Naan bread and tzatsiki
Vegetarian Chef's Salad (it had chickpeas!)
Marinara Spaghetti & Caesar Salad
and a Layered Greek Dip (for dinner!)

We obviously weren't starving. And as a final nod to vegetables we topped the week off with a delicious carrot cake!

Have you ever tried a week without something you normally include in your diet?

Goal 81. Streamline Personal care products

Hey Guys!

Wow, was I exhausted from writing after doing it every single day in October. But it is good to be back, working on my goals.

One of the goals that I have known I needed to get to work on for a long time was my personal care products. There are a few reasons for this:

  1. they were overflowing my bathroom, and even threatening to overflow my overflow box
  2. a lot of them didn't work, so I needed to find some that did
  3. I had a LOT of old stuff, that also didn't work
I think I am a selective hoarder and my weak spot seems to be in the bathroom. Weird!

{Thriving this Winter} Day 7: Go

Today is going to be a really simple post.

Go do something about that.

Goal 76. Make your own preserves (the easy way!)

Did you guys know that its already August?! This summer has gone by so fast! I am sad to say that we haven't really done a lot of the things that I love about summer, and have spent a lot of time on pinterest inside the house.

So I decided to do something summery and make some preserves! But I am cheap and a little bit lazy. Plus we are on a sugar-free diet, so making a whole bunch of super sugary jam didn't seem like a good idea. Actually I have found that there is a brand of pectin that requires much less sugar, but it has to be ordered off the internet and I didn't want to miss great fruit deals. So instead of actual canning, I decided to freeze instead!

Goal 80. Streamline cleaners

The best part of moving house means that you also get to do a huge junk removal process. Before moving we got rid of tons of stuff (boxes of books, huge bags of clothes, furniture and kitchen gadgets) and we are still continuing this process. I have already taken a box to Value Village and have started a second!

While simplifying and minimalism are great ideas it is important not to just focus on reducing but the reasons why we simplify. It is not enough just to get rid of things, but a lot goes into deciding what to keep and what to toss. It's like editing a paper. (Prince Charming has gone back to school so academia is on my mind!)

One of my goals has been to streamline my cleaning products for a long time. I also wanted to keep the most effective and green products I could. Here's how I decided to finish up this goal.
